There is nothing nicer than a warming winter soup. Nourishing and wholesome.
2 garlic cloves
1 litre chicken stock
2 cups water
salt & pepper
Heat olive oil and gently toss crushed garlic & diced onion.
Peel and chop potatoes into small pieces and cook with garlic & onion.
Chop cauliflower & add to pan.
Add stock and water. Cook until vegetables are soft.
Cool slightly and blend ingredients.
Serve with salad seeds and a drizzle of olive oil.
