Pesto from fresh basil purchased at the markets is a tasty and healthy treat that can be used in a variety of ways, whether it be a topping on a poached egg, a base for a toastie or accompanied with pasta. I have included the recipe below, however, my ingredients are only approximate and of course, can be changed according to the amount you wish to make.

1 bunch of fresh basil

1/2 Cup pine nuts

1/4 Cup olive oil

1-2 garlic cloves

Toss pine nuts and garlic in frypan until slightly brown.

Wash and dry fresh basil, then place in food processor with garlic and pine nuts.

Pour in olive oil whilst processing.

Use immediately or store in jar and refrigerate.
